A recipe from Darryl McLean from Basils @297

Ingredients

  • 150g soft butter, chopped
  • 3/4 cup castor sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 1/2 cups self raising flour
  • 1 1/2 cups milk
  • 1/2 t ground cinnamon
  • 1/2 t ground nutmeg
  • 700g cooked apples (pink lady)
  • 300ml thick prepared custard, available from the supermarket

Method:
Using an electric beater, cream butter, sugar and vanilla until pale and creamy. Add eggs and beat until well combined. Add flour and milk in two batches and beat until a good batter consistency is formed.

Spread half the batter into 20cm springform pan and arrange half the apples on top. Dollop half the custard on the apple. Repeat with remaining batter, apples and custard, Swirl custard into batter using a skewer, then sprinkle nutmeg and cinnamon on top.

Bake at 160C for 1 1/2 hours. Cool completely in pan before slicing and serving with a dollop of thick cream if you like.
